Mediterranean Quinoa Stuffed Tomatoes Recipe

Wraps are one of my go to vanlife lunch staples, they're super quick to make, generally healthy, and a great way of using up left overs which is awesome as I really hate food waste!


Sometimes though, I want to mix it up. Inspired by how easy our stuffed mushroom recipe from the other week was, and the abundance of vine ripened tomatoes and zucchini at our local market, instead of making the standard wrap we threw together these Mediterranean Quinoa Stuffed Tomatoes instead.


So worth the experiment as they turned out AMAZING!

Vegan Mediterranean Quinoa Stuffed Tomatoes

Serves: 2


The Ingredients

  • 6 Large Vine ripened Tomatoes

  • 1 Cup of Cooked Quinoa

  • 1/2 Cup of Diced Zucchini

  • 1/4 Cup Finely Diced Red Onion

  • 1 Clove of Garlic Finely Minced

  • Juice of half a lemon

  • 1tsp of an Italian Herbs blend or Rosemary and Thyme depending on what you have on hand

  • Salt and Pepper to taste

  • Spray oil - if you’re planning on baking them.

  • Balsamic Glaze or dressing to garnish

  • Make it Awesome! Add cubes of Damona Mozzarella with Herb & Tomato


The Method – Could it get any simpler?

  1. Grab a medium mixing bowl and add the quinoa, zucchini, onion, garlic, lemon and herbs. Mix thoroughly and allow to marinade for a few minutes while you prepare the tomatoes.

  2. While the quinoa stuffing rests slice the tops off the tomatoes and gently remove the insides using a metal spoon.

  3. Fill the tomatoes with the stuffing and they are ready to eat!

  4. If you are going to bake them spray lightly with oil and garnish with a few leaves of fresh rosemary if you have some around.

  5. Place in the air fryer or a preheated oven for 8-10 minutes on 190 degree.

  6. Serve drizzled with some balsamic glaze and freshly grated salt and pepper!


Tips


The spray oil is not 100% necessary but it helps crisp up the quinoa!


Make it Incredible!

We love this dish as a light lunch and usually serve it with some fresh greens dressed with the inside of the tomatoes and extra vegan cheese!
